A staple in their everyday life, the Teochew braised duck, or “Lor ark”, is usually paired with braised bean curd and hard-boiled egg, and enjoyed with fluffy white jasmine rice, garnished with parsley, cucumber and ground chilli.
The Chiams were no different. Grandpa Chiam was one of many early migrants, arriving in Singapore circa 1941, and made a living selling braised duck from his makeshift trishaw to countless people.
